The route
Reykjavik east on Route 1: Seljalandsfoss (90 mins, $8 parking) — walk behind the falls, add Gljufrabui hidden waterfall 10 minutes further. Skogafoss (2 hours from Reykjavik) — climb the stairs on the right for the top view. Solheimajokull glacier viewpoint (5 minutes off the ring road, free). Reynisfjara black beach (2.5 hours) — stay away from waves. Return via Dyrholaey arch and lighthouse. Home by 8pm if you leave at 8am.
The mistake most people make
Trying to reach Jokulsarlon glacier lagoon in one day. It's 380km each way from Reykjavik — 10+ hours driving, 2 hours at the lagoon, in dark for most of winter. Don’t. Either overnight in Vik, or accept that the south coast day trip stops at Reynisfjara. Rushing east past Vik in winter is genuinely dangerous with wind and ice. Save Jokulsarlon for a Ring Road trip or a proper 2-day south coast overnight.

Skogafoss from the base at sunrise, or Seljalandsfoss from behind the curtain of water at sunset. Both are worth waiting for.
